The day respite ministry for the homeless in Galveston rebuilt its facility after the 2008 storm and retooled services. The number of homeless had increased; the need for mental health support and addiction counseling had increased; resources had changed. The only difference is that she’s making a batch big enough for about 70 guests. Sandoval is the kitchen coordinator at Christus Our Daily Bread, where she oversees the preparation of breakfast and lunch for the homeless clients who come to the shelter for the hot meals, counseling services and compassionate support that Our Daily Bread has provided in Galveston since 1985. Running the kitchen requires both ingenuity and flexibility, since the shelter stretches its budget with donated food whenever possible.
